rice map Bean soup with smoked knuckle pork (Babgulyas)

Preparation time:210 minutes.

Ingredients: 500 g pork, smoked pork ham, 150 g Deroni beans, 1 sliced carrot, 1 sliced parsley root, a small onion, 4 cloves of garlic, a tablespoon of fat, one tablespoon of flour, 200 ml yogurt, a tablespoon of paprika, salt and pepper.

Method of preparation: Soak the pork ham for 24 hours to remove some of the salt. Boil the ham with onion and garlic for 90 minutes until the skin is tender. Remove the onion and garlic and add salt and pepper. If it is too salty, throws some of the liquid and add fresh water. Add the beans, carrots and parsley in the pot and let it simmer for approx. 90 minutes. If the soup is too fat, allow to cool down and collect the grease on top. Prepare a mixture of lard and flour, add paprika, and yogurt. Pour this mixture into the soup and boil it one more time. When serving, cut the meat in pieces, place a piece in a deep dish and pour the soup over it.
