Ingredients: 400 g Deroni rice, 100 grams peas, 100 grams of corn kernels, 4 red peppers, 1 small red onion, 3 carrots, 100 g green olives, lemon, green salad, salt, pepper, 4 tablespoons of oil. Method of preparation: Boil the rice in water with salt. Separately, boil the peas and carrots. When ready, drain out the water and dice the vegetables after cooling.
When everything is cooled, pour the rice, peas and carrots in a larger salad bowl. Cut the pepper and the small onion. When done, add them over the rice together with the corn and the olives. Mince the tomatoes and put them on top of the rice. Stir everything up, adding the oil. Serve with salad.
Gyros
Preparation time: 60 minutes. Ingredients: 200 g pork or chicken breast, 100 g rice, 1 large onion, 1 clove of garlic, 1 lemon, salt, 1 teaspoon rosemary, 3 sage leaves , 1 2 teaspoon oregano / wild marjoram, 1/2 teaspoon paprika, pepper, 4 tablespoons olive oil, 1 / 2 parsley bundle, 100 g rice, 1 tomato. Method of preparation: this is a really famous Greek dish. It combines strips of roasted spicy meat, spit on the grid to allow fat to drain. If you wish to do this at home, you may use a frying pan. Wash the meat and cut into 0.5 cm thick strips, then mix it with cut onion. Peel one lemon and mix it with the fine chopped garlic, salt, rosemary, oregano and chopped sage leaves. Leave this mixture for a few minutes, to get the proper taste of the spices. Add the spices over the meat add pepper and paprika, pour 3 tablespoons of oil and mix everything well. Cover the meat with food foil and leave it for at least 30 minutes. Clean and wash the rice then let it boil. Heat 1 tablespoon of oil in a frying pan, place the strips of meat and let it fry on small fire mix continuously mixing everything for 3 minutes. Pour 5-6 tablespoons of water, diminish the fire and leave everything squash. Mix the rice with the small cut cubes of tomatoes separately, and serve it with rice on the side, sliced lemon and parsley.
Greek soup with rice
Preparation time: 60 minutes.
Ingredients: 1 concentrated soup, 100 g rice, 2 eggs, 1 lemon’s juice, a teaspoon of chopped parsley, 1.5 l of water.
Method of preparation: Make the soup and when it’s cooked add the washed rice and let it boil for about 15 minutes. Whisk the eggs and add them when the rice is boiled. Pour the lemon juice gradually and add parsley. Serve hot.
Greek pilaf
Preparation time: 90 minutes. Ingredients: 1 kg chicken, 300 g rice, 3 chicken livers, 4 tomatoes, 2 onions, 250 g mushrooms, 6 dl water, butter, salt, juice from half a lemon. Method of preparation: Cut meat in medium sized slices. Wash the mushrooms, cut and sprinkle them with the lemon juice. Fry the minced onion in oil, until it gets golden brown, add the meat and roast it on all the sides. Add the cut tomatoes, the salt and the pepper. Add some hot water. When the water has almost evaporated, and the meat is ready, add the mushrooms. Grease a pan with butter and place it over the heat, add the washed rice and stir it carefully. When the rice has absorbed all the fat, add some hot water and some salt. Put your dish into the oven for 20 minutes. Grease a heat resistant pot with butter, add the rice and stick into it the fried liver and sprinkle everything with some of the mushroom sauce. Put the rice on a platter, place the meat and mushrooms in the middle. Decorate it with parsley.
Risotto with pumpkin
Ingredients: 300 g of Deroni rice, 2 slices of diced zucchini , 1 ½ liters of meat or vegetables soup, 1 onion, 2 tablespoons of olive oil, a bit of butter, ½ glass of dry white wine, 4 tablespoons of grated parmesan, salt, pepper. Method of preparation: In a pan brown the onions in oil, add the rice and the wine and let them fry for a few minutes. Add the zucchini and let cook, by gradually adding a ladle of hot soup. When the rice and the zucchini are boiled, turn off the heat, add butter and let resting for 2-3 minutes.
