Dry bean soup with mushrooms
Preparation time: 60 minutes
Ingredients: 250 g Deroni beans, 200 g boletus, 3 onions, 1 green pepper, 1 carrot, 1 parsnip, a wisp of parsley, a wisp of lovage, salt, 1 liter of borsch (fermented wheat bran) or vegetable stock.
Preparation:
The beans are cleaned of impurities and put to soak the day before. Boil it the next day, after rinsing 2-3 times in cold water. When the water boils, change it with a fresh one. When it begins to boil again add the chopped vegetables: onion, carrot, parsnip, pepper. Mushrooms are washed the day before and put in cold water to soak until the next day.Then, boil them and add them to the beans. The borsch or stick is added only after the beans are well cooked. Finally sprinkle some parsley and lovage.
