Preparation time: 60 minutes. Ingredients: 800 g bacalhau fish (dehydrated hake fish in salt), 1 onion, 1 clove of garlic, 100 ml of olive oil, 150 g leek, 100 ml of white wine, 1 spoon of tomato pulp, 2 tomatoes, 300 g of Deroni rice, 2 tablespoons of chopped parsley, water, salt and pepper.
Method of preparation: Boil the fish in water when ready turn off the flame and put aside 800 ml of soup from the fish. Remove the skin and bones of the fish and cut the fish in thick pieces. Chop the onion and garlic and fry them in olive oil. Add the round slices of leek. Fry well and add wine. Leave it to fall then add the cubes of tomato pulp without skin and seeds. Put the rice, salt and pepper. Pour the soup where the fish has boiled and let it all boil for another 10 min. after that add the fish and leave to boil for 3-4 min. Serve sprinkled with parsley.
