Bean salad

Preparation time: 60 minutes

Ingredients:
a cup of Deroni beans, some olives, 1 bell-pepper or green pepper, 2 medium carrots, � onion, salt, lemon, parsley.

Preparation:
The beans are cleaned of impurities and put to soak the day before. The next day, after rinsing 2-3 times in cold water, put it to boil. When it is already soft, add sliced carrots and allow it to cook until they are done. Once they cooled down, add the sliced olives, the chopped peppers and onions. Sprinkle with juice form one lemon. Finely cut a bunch of parsley leaves and add them in the pot. Parsley has extraordinary nutritional virtues, has a lot of vitamin C and gives a special flavor salad
