Preparation time: 150 minutes.

Ingredients: 500 g Deroni beans, 2 medium onions chopped, 3 garlic cloves, 3 bay leaves, 2 tablespoons chopped parsley, 2 tablespoons tomato paste, 1 large sliced carrot, 6 black peppercorns, 500 g smoked pork sausages, ½ teaspoon salt, 2 tablespoons of olive oil, a teaspoon of paprika, one teaspoon of cayenne pepper, 2 tablespoons flour.

Method of preparation: Clean and wash the beans. Allow them to soak for 30 minutes, drain and rinse under running cold water. Then put it in a large pot and cover with water (layer of water should exceed the beans by approx. 5 cm). Boil them, reduce the heat and simmer for 30 minutes. Take the pot off the stove and pour cold water enough to cover the beans by 7-8 cm. The bean should stay at the bottom of the pot. Leave it for few minutes, then drain the water and replace it with fresh water. Put the pot on the fire, boil it once more, reduce the heat and let it to boil slowly again. Add the onion, garlic, bay leaves, parsley, tomato paste, carrots and peppercorns. Boil slowly on very low heat for 90-120 minutes, until the bean is soft. After 45 minutes of boiling, add the sliced smoked sausages. 15 minutes before serving add salt. Heat some oil in a pan until it is smoking, add the paprika and chili quickly, then the flour. Mix well until it thickens like a paste. Add pasta to the soup, stir it well and let it simmer for 5 minutes, until the sauce reaches the desired consistency. Serve with bread and red wine.
