Aegean salad
Preparation time: 30 minutes.
Ingredients: 150 g Deroni rice (long grain), 100 g red onion or shallots, 1 medium cucumber, 100 g white cheese, a little bit of salt, 1 large clove of garlic, 2 tablespoons of olive oil, 3 tablespoons lemon juice, 2 tablespoons chopped fresh dill, salt and pepper.
Preparation: Wash the rice, boil it in plenty of water and drain it after 25 minutes. Clean the onions; wash and chop them finely. Wash and cut the cucumber into thin slices (you can peel it if you prefer that). Cut the cheese in cubes and mix all the ingredients above, in a bowl with dill and pepper. Clean the clove, press it with a fork and blend it with oil and salt, then add lemon juice. Pour over the cheese mixture and mix it all together with a spoon. You can serve it after 20-30 minutes.
