Indian-style rice
Ingredients: 200 g rice Deroni, 2 tablespoons oil, a teaspoon of caraway seeds, 100g fresh or frozen peas, 500 ml of water, ½ teaspoon of salt. Method of preparation: Wash the rice at least once then drip. Heat the oil in a big casserole with a thick bottom and then add the caraway. When the caraway seeds start sizzling, add the rice and mix it well. Add the salt, then the water, so the rice is perfectly covered. If necessary, add more water (the water level should be approximately 2 cm above the rice). When the water begins to boil, let it simmer for about 5-7 minutes. In all this time check if water has not completely evaporated. Remove with a spoon some beans from the bottom of the pan and check if the rice is ready. When the rice is almost done, add the peas and cover it. Leave it to boil for 2 minutes, then stop the heat and cover it so the peas to be steamed. Sprinkle fresh chopped coriander leaves.
